[E39] Thermostat - how low is too low? by

Anyone know the proper operating temp range for a thermostat on an e39
(530i)? Mine will get up to about 92C, but then occasionally drops down to
as low as 78C, for example when driving on the highway at 85mph. Is this
too low and is indicative of a thermostat stuck open?

I'm at 44k miles on my 530i. Brake warning came on. The shop is telling me
I need pads (that's a given), but also new front rotors. There is a visible
groove on the edge of the rotor, so I know they're not lying. They must be
very close to being done even if not totally done just yet. ...

I posted about this issue before, but still haven't been able to resolve
this. The car in question is an '02 530i with sport pkg, 36k miles. Since
I got it at 30k miles, it has not been very solid/surefooted at speeds of
85mph and above. It feels floaty, like I'm getting hit by crosswinds on...
