So the engine heats up to 200f+, the STOP warning comes on the dashboard,
it says pull over and fill the coolant. So I check: the coolant if full,

viscosity is important for starting the motor, but once at running
temperature it's not that important.

Got to determine what system the fault is in.
Ignition, or fuel to begin with.
Easiest way is to spray some starting fluid in the intake and see if it
runs for a little longer. Don't spray it while running.
If the starting fluid makes it run longer you know you have a fuel
problem.
