Default Anti-freeze level & trouble light 2001 Jetta

I have a 2001 Jetta that has been a nightmare since I bought it used 6
months ago. I have had to replace the entire engine for $8000.00. Now I
want to know why the idiot light for the radiator light goes on even
though the radiator is full?

Overheating? Defective sensor?
